Pasta With Mussels Garlic And Parsley

Ingredients

1 vacuum pack of mussels 1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, finely chopped 1 red pepper chopped Large handful flat-leaf parsley, finely chopped

Method

  1. Cook the pasta in a large pan of boiling, salted water for 10 minutes, or according to the package directions, until al dente. Drain well.

  2. Fry the red pepper in a small pan on a high heat until seered. Keep warm.

  3. Meanwhile, heat the oil in a large pan with a tight-fitting lid. Add the onion, and cook over medium heat for 5 minutes, or until the onion is soft but not colored. Add the garlic and cook for another 1 minute.

  4. Microwave the mussels, as per instructions.

  5. Add the pasta, mussels, red pepper and parsley to the pan and toss through. Ladle the pasta and any juices into bowls and serve immediately.
